We love the summer time, but, girl, does it get HOT! Looking for a refreshing and yummy way to cool off this summer? Try our delicious Coconut, Lime & Mint Granita recipe! It’s basically vegan-friendly ice cream. No ice cream maker required! Enjoy!
What you’ll need:
- One 14 oz. can full fat coconut milk
- Juice of one lime
- 1/2 cup water
- Fresh mint leaves
- 1/4 cup sweetener of choice (honey, maple syrup, coconut sugar)
- (Optional – Mint leaves and lime wedges for garnish)
Bring ½ cup of water and a small handful of fresh mint leaves to a simmer, add in sweetener and stir until dissolved. Simmer for a few more minutes to make a mint tea. Strain out the mint leaves and allow to cool for a few minutes.
Add sweetened mint tea, coconut milk and lime juice to a blender and blend to combine.
Pour coconut milk mixture into a shallow dish. Place dish in the freezer and scrape every 30 minutes for 2-3 hours or until your desired frozen texture is reached. Spoon into 2-3 bowls and enjoy!
