Looking for a yummy salad to bring to work? Prep all of these toppings ahead of time and store them separately in the fridge. In the morning, toss everything into a big tupperware container to enjoy for lunch.
What you’ll need for the salad:
Mixed Spring Greens
Pitted Kalamata Olives
What you’ll need for the Sweet Green dressing:
1 good handful fresh basil
2 tablespoons chopped onion
1 good handful fresh flat leaf parsley
2 tablespoons honey
2 tablespoons mustard
1 tablespoon apple cider vinegar
1/2 teaspoon ground pepper
pinch of sea salt
4 tablespoons extra virgin olive oil
Throw all the ingredients through the sea salt into a blender and blend on high just until everything is combined. Now turn the blender speed to low and slowly pour the olive oil in while the blender is going to emulsify everything.
